  • 3 Eggs, beaten
  • 2 C. Sugar
  • 1 C. Vegetable Oil
  • 1 Tbs. Vanilla Extract
  • 1 1/2 C. All-Purpose Flour
  • 1 1/2 C. All-Purpose Whole Wheat Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Cinnamon
  • 3-4 Apples, cored, peeled and chopped
  • 1 C. Walnuts, chopped

Preheat oven to 325°. Grease and flour two 9 X 5" loaf pans. In a large bowl, mix eggs, sugar, oil and vanilla until well-blended; set aside. In a medium-sized bowl, mix flour, baking soda and cinnamon. Stir flour mixture into egg mixture. Fold in apples and walnuts. Bake loaves for one hour and 10 minutes.
