  • 2 ½ cups wheat bran
  • 1 ½ cups wheat flour
  • 1 teaspoon salt
  • ½ cup chopped nuts
  • 1 ½ teaspoons baking soda
  • 2 eggs
  • 1 ½ cups buttermilk
  • ½ cup molasses
  • ¾ cup applesauce
  • 2 tablespoons oil

Preheat oven to 400F.
Whisk together wheat bran, wheat flour, salt, baking soda and chopped nuts until well combined.
In separate mixing bowl, beat the eggs. Add in the buttermilk, molasses, applesauce and oil.
Slowly add the dry ingredients to the wet, stirring the whole time to make sure it is well-combined.
Spoon into a greased or lined muffin tin and bake for 15-20 minutes.
Let cool and serve!
