The classic chocolate pudding dessert has been given a new twist. Not only has it been warmed up in the crockpot, but it has also been permeated with the flavor of almonds, and sprinkled with the crunchy nuts.

  • 1 C. Superfine Sugar
  • 1 1/2 C. All-Purpose Flour
  • 2 1/4 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 6 Tbs. Butter, melted and cooled
  • 1/2 tsp. Almond Extract
  • 1/4 C. Cocoa Powder, divided
  • 1 Egg, lightly beaten
  • 3/4 C. Almond Milk
  • 1 C. Light Brown Sugar
  • 1/2 C. Chopped Almonds

Line a large slow cooker with parchment paper. In a large mixing bowl, whisk together the superfine sugar, flour, baking powder, salt, butter, almond extract, 2 tablespoons of cocoa powder, egg, and almond milk. Pour pudding mixture into crock pot. Sift brown sugar and remaining cocoa powder evenly over mixture. Cook on high for 3-4 hours until pudding has set. Sprinkle with chopped almonds before serving.
