  • 2 Golden Delicious apples, diced
  • 1 ½ cups of all-purpose flour
  • ½ cup of brown sugar
  • 1/3 cup of white sugar
  • ¼ teaspoon of baking soda
  • 2 teaspoons of baking powder
  • 2 teaspoons of cinnamon
  • 1/3 cup of sunflower oil (oil of your choice)
  • 1 egg
  • 1/3 cup of milk
  • The crumble:
  • 1/3 cup of brown sugar
  • 2 tablespoons of flour
  • 2 tablespoons of cinnamon
  • 1 tablespoon of unsalted butter
  • 1/4 cup crushed walnuts

Preheat the oven at 375F
In a large bowl, combine all the dry ingredients (flour, brown sugar, white sugar, baking soda, baking powder, and cinnamon) and whisk them together till it’s well combined
In the same bowl, add the wet ingredients (sunflower oil, egg, and milk) and mix until it forms a soft batter.
In a small bowl, combine the brown sugar, flour, walnuts, cinnamon and butter until the mixture resembles a coarse cornmeal.
Add the diced apples and mix with the soft batter.
In a 12-cup muffin tin, place the baking cups and add the batter using an ice cream scooper for more control.
Sprinkle the crumble on top of the batter.
Bake the muffins for 18 to 20 minutes. To check if the muffins are fully baked, use a toothpick and insert it into the muffin till it comes out clean.
Let them muffins cool for 10 minutes.
