  • 2 C. rolled oats
  • 3 C. mixed nuts
  • 1 tsp. ground cinnamon
  • 2/3 C. brown sugar
  • 1/2 C. honey
  • 1/3 C. water
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 3 C. yogurt of choice
  • 1/4 C. peppermint candy, crushed
  • 4 large mason jars

Preheat your oven to 350°F and line a cookie sheet with parchment paper. In a large bowl, combine oats and nuts and set aside. In a medium saucepan, mix together brown sugar, honey, and water. Bring to a boil, reduce heat, and stir in salt and vanilla. Once combined, drizzle the mixture on top of the oats and nuts. Toss to combine and let stand for 10 minutes. Transfer to your prepared baking sheet and roast for 30 minutes, stirring once. Let stand for 10 minutes before assembling the jars. Begin to form layers of nut mixture and yogurt into each jar. Sprinkle with crushed peppermint and serve immediately.
