Nutty Pistachio And Cream Cheese Filled French Toast

- 1 C. whipped cream cheese
- 4 T. powdered sugar
- 3/4 tsp. vanilla
- 3 oz. pistachios, finely chopped
- 1 loaf Italian bread
- 3 cage-free eggs
- 1/3 C. hazelnut creamer
- 3/4 tsp. cinnamon
- 2 T. margarine
- maple syrup
Begin by mixing the whipped cream cheese, powdered sugar, vanilla, and pistachios.
Slice six 1 ½ inch slices of Italian bread. Make a pocket in the center of each slice, starting from the center of the top and slicing not quite down to the bottom. Don’t slice all the way to the sides either.
With a knife, spread about 1/6 of the cream cheese mixture into each of the pockets, then press to close.
Whisk the eggs, creamer, and cinnamon together. Place the remaining finely chopped pistachios into a dish.
Heat one tablespoon of the margarine in a frying pan over medium heat until hot.
Dip each side of three of the bread slices into the egg mixture, then press into the pistachios. Place them into the frying pan and immediately turn the heat down. Fry them until they've browned, and gently flip over and fry the other side until its browned. Repeat with the other three slices of bread.
Drizzle with maple syrup if desired.
