Nutty Spinach Salad with Chicken

Great taste, fun to eat, goes with everythingand it's also very healthy. This is very easy because you are taking help from the store with the bagged spinach and carrots, in our busy lives this makes things alot easier.

  • 2 bags spinach
  • 2 handfuls pine nuts
  • 1 sm. bag chopped carrots
  • 4 bone-on chicken breasts
  • 1 1/2 tsp. fresh tarragon

Bake your chicken breasts, leave the skin on while baking to keep chicken moist. While the chicken is baking, put your spinach in a steamer along with your chopped carrots and tarragon. Steam until desired tenderess. In a separate pan, heat up your pine nuts to release the oils, you will know when they are ready, you will smell the great aroma of toasted nuts. When your chicken has cooled, remove the skin and cut or pull the chicken from the bone. Put your steamed spinach and carrots in a big bowl and toss in the nuts and shredded chicken, add fresh cracked black pepper and salt to taste. Toss everything together and serve.
