Oatmeal Cherry Toffee Chocolate Cookies

There's a whole lot going on in these cookies, but all the flavors compliment each other perfectly!

  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 1 C. butter
  • 1 egg
  • 3/4 C. sugar
  • 3/4 C. brown sugar
  • 1 tsp. vanilla
  • 1 C. dried cherries, snipped if needed
  • 1 C. good quality dark chocolate, chopped
  • 1 C. toffee bits
  • 1 1/2 C. quick-cook oatmeal

Preheat oven to 350 degrees. Cream butter and both types of sugar until nicely blended. Add egg and vanilla, beat lightly until smooth. Stir in flour and baking soda (if you used unsalted butter, add just a wee dash of salt to the batter at this point) and mix well. Stir in oatmeal, dried cherries, chocolate, and toffee bits. Shape into 2 logs. You can bake these immediately or chill. Slice into 1/2-3/4 inch slices and place on greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Cool, remove to rack.

Yield: 2 dozen
