Oatmeal Raisin Chews

  • 2 1/4 C. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 C. quick-cooking oats
  • 1 C. packed dark brown sugar
  • 1/2 C. sugar
  • 1 C. butter -- softened
  • 2 Tbs. honey
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 1 1/2 C. raisins
  • 1/2 C. walnuts -- chopped

Preheat oven to 300ºF. In a medium bowl, combine flour, soda, salt, and oats. Mix well and set aside. In a large bowl, blend sugars with electric mixer set at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla, and eggs. Mix at medium speed until light and fluffy. Add the flour mixture, raisins, and walnuts. Blend at low speed just until combined. Drop by rounded Tbs. onto ungreased cookie sheets, 1 1/2" apart. Bake for 22-24 minutes or until cookies are light golden brown. Immediately transfer cookies to a cool flat surface.

Makes 48 cookies.
