Ingredients

  • 2 Tbs. brandy
  • 1 Tbs. honey
  • 1/3 C. raisins
  • 5 Granny Smith apples, peeled, cored and sliced
  • 1/2 C. natural cane sugar
  • Crumble Topping
  • 2/3 C. whole-wheat flour
  • 1/4 C. rolled oats
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 5 Tbs. unsalted butter, chilled and cut into pieces
  • 5 Tbs. light brown or Demerara sugar
  • vanilla ice cream or chilled light cream, to serve

Directions

Preheat oven to 400 degrees. Butter a medium baking dish. Put the brandy, honey and raisins in a small saucepan and set over medium heat. Cook for 5 minutes, stirring constantly, until almost all the liquid has evaporated. Set aside.

Put the apples, sugar and 2 tablespoons cold water in a separate saucepan and set over medium heat. Cover and cook for about 10 to 15 minutes, stirring often, until the apples have softened. Stir in the raisin mixture and let cool. Transfer to the prepared baking dish.

To make the crumble topping, put the flour, oats, baking powder, cinnamon and butter in a bowl. Rub the butter between your fingertips until the mixture resembles coarse sand.

Stir in the brown sugar and sprinkle the mixture evenly over the apple mixture in the baking dish.

Bake for 25 to 30 minutes, until the topping is crisp and golden brown. Serve warm topped with vanilla ice cream.
