  • 3 lb. Yukon Gold potatoes, peeled and thinly sliced
  • 1 T. vegetable oil
  • Salt and pepper to taste
  • 1 onion, diced
  • 1 C. heavy whipping cream
  • 1 C. chicken broth
  • 2 C. cheddar cheese
  • 1 T. parsley

Preheat oven to 400 degrees. In a large bowl, toss potato slices with oil, salt, and pepper, until evenly seasoned. In a greased baking dish, layer potatoes, onion, and cheese, ending with potatoes. In a bowl, whisk together chicken broth and cream; pour evenly over potatoes. Bake for an hour until bubbling and top is golden.
