  • 1 bag vanilla wafers
  • 5-6 ripe bananas, sliced
  • 6 large egg yolks, reserve eggs whites for topping
  • 1 (12-ounce) can evaporated milk, plus 1 can water
  • 2 cups granulated sugar, plus 2 tablespoons for topping
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract

Take out a bowl and mix together the 2 cups of sugar and flour. Add the egg yolks and stir until thoroughly combined. Add the milk and 1 can of water and stir all of the ingredients until thoroughly mixed together. Cook the mixture over medium high heat and regularly stir until the pudding reaches a thick consistency. Remove the pudding from the heat once it thickens. Take out a large bowl and cover the bottom of it with the vanilla wafers in a single layer. Add the banana slices on top of the wafers in a single layer. Pour enough pudding on top of the wafers and bananas so that the bottom of both ingredients are completely covered. Alternate until all of the ingredients have been used. Take out a smaller bowl and whip the egg whites until they are stiff. Add the vanilla and 2 tablespoons of sugar and mix together. Transfer this mixture on top of the banana pudding. Bake at 350 degrees F for about 1 hour, or until the pudding is golden brown. Serve.
