  • ½ C. onion, finely diced
  • 3 cloves garlic, minced
  • 3 T. dried parsley
  • 1 C. breadcrumbs
  • 1 large egg
  • ½ C. cold water
  • 2 T. olive oil
  • Salt and pepper to taste
  • ½ tsp. nutmeg
  • 2 ½ lb. extra lean ground beef
  • 1 (30 oz.) can tomato sauce

Using a food processor, blend together onion, garlic, parsley, and bread crumbs. In a large bowl, whisk together egg, water, oil, salt, pepper, and nutmeg until well combined. Add ground beef and mix thoroughly. Roll mixture into balls (about the size of a golf ball) and place into a greased baking dish with a small amount of water. Bake for 25 minutes, checking occasionally to loosen up meatballs if ever sticking to the pan. Heat pasta sauce, toss meatballs in sauce, and serve over pasta.
