Ole Taco Salad

Light crunchy lettuce and fresh tomatoes balance out the beef and cheese in this salad.

Ingredients

  • 12 oz. ground beef
  • 2 C. red and green bell peppers (chopped)
  • 2 C. Picante sauce
  • 1/4 C. cilantro (chopped)
  • 4 C. iceberg lettuce (chopped)
  • 2 C. tomatoes (chopped)
  • 1 C. Cheddar cheese (shredded
  • 1 C. tortilla chips
  • 1/4 C. green onions (chopped)
  • 1 Tbs. Tabasco
  • Creole seasoning to taste

Directions

Cook beef and bell peppers, Creole seasoning and Tabasco over medium heat. Stir to crumble. Add salsa. Bring to boil. Stir in cilantro. Place 1 C. lettuce on each of 4 plates. Top with 1 C. meat mixture. Sprinkle each serving with 1/2 C. tomato, 1/4 C. cheese, 1/4 C. chips and 1 Tbs. onion.
