This shrimp pasta is packed with marinated tomato that add a new taste to a simple dish. Marinate them for an hour or more but they’ll still pack a punch. Paired with shrimp you can’t go wrong!

Ingredients

  • Marinated tomatoes
  • 1 ½ lb. Roma tomatoes, diced
  • 1 C. fresh basil
  • 2 T. olive oil
  • 1 tsp. Italian seasoning
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • Chicken
  • 2 T. butter
  • ½ C. white wine
  • 1 ½ C. heavy cream
  • 1 C. Parmesan
  • 1 lb. angel hair pasta
  • 2 C. mozzarella, shredded
  • 1 lb. shrimp, deveined and peeled

Combine tomatoes with basil, olive oil, garlic, Italian seasoning, salt, and pepper and mix thoroughly. Set aside for 1 hour to let marinate. Cook angel hair pasta according to package directions and set aside. In a large skillet heat butter then stir in wine and bring to a boil. Once boiling add heavy cream and Parmesan then let simmer to desired consistency. Add in pasta and marinated tomatoes and stir until pasta is completely coated in sauce. Cook shrimp and add it to the mixture then sprinkle cheese on top and melt it.
