  • 6 Eggs
  • ½ Cup of Diced Red Bell Pepper
  • ½ Cup of Diced Green Onion
  • ¼ Cup of Diced Sweet Onion
  • ½ Cup of Shredded Cheddar Cheese
  • 2 Teaspoons of Chili Powder
  • ½ Teaspoon of Garlic Powder
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

While you preheat your oven to 350 degrees Fahrenheit, line 6 spots in a muffin tray with paper liners. Then, whisk your eggs together in a bowl and stir in the red pepper, green onion, sweet onion, cheddar cheese, chili powder, garlic powder, salt, and pepper. Pour even amounts into each liner.

Bake these muffins for 20-23 minutes, or until the middles are not liquidy or wiggly. Enjoy them warm or save them to be reheated tomorrow morning!
