Ingredients

  • 6 to 8 chicken legs and/or thighs, skinned
  • 2 C. chicken broth
  • 2 Tbs. olive oil
  • 1 onion, chopped
  • 1/2 pound carrots, sliced
  • 1/2 pound sweet potatoes, sliced
  • 1 tsp. paprika
  • sprinkle of salt and pepper
  • pinch of saffron threads, crumbled

Season chicken with salt and pepper and fry it in a shallow pot, in one tablespoon of olive oil. Remove and set aside. Using the same pot, cook the onions in the remaining oil, for about five minutes. Toss in the chicken, sweet potatoes and carrots, as well as chicken broth and condiments. Simmer 35 minutes, making sure nothing sticks to the bottom of the pot. Serve it as it is, or add brown rice, for a truly hearty meal that will keep you full for hours.
