  • 1 T. vegetable oil
  • 1 lb. ground beef
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 garlic cloved, minced
  • 1 white onion, chopped
  • 1 C. button mushrooms sliced
  • 2 C. fresh spinach
  • 2 C. marinara sauce
  • 7-8 oven-ready lasagna sheets
  • 1 C. ricotta cheese
  • 1 C. mozzarella cheese
  • 2 T. basil

Preheat your oven to 350 degrees. In a oven safe pot heat oil.

Cook ground beef, salt and pepper for 5-10 minutes until the beef starts to turn brown. Add in garlic and onions and cook until the vegetables become translucent. Add in button mushrooms, spinach, and one cup marinara.

Push the beef mixture to one side of the pan with a large spoon or spatula to allow you to layer lasagna noodles under the beef. Even out the beef mix and place the remaining noodles on top. Cover with remaining marinara sauce and cheese. Bake for 20-25 minutes and garnish with basil.
