In the mood for a savory Italian dinner, but not keen on cleaning up lots of dishes afterwards? One skillet will be all you need to cook up these tender spaghetti noodles mixed with crisp chunks of bacon and parmesan cheese.

  • 8 oz. Bacon, cut into bite-sized pieces
  • 3 1/2 C. Low-Sodium Chicken Broth
  • 1 16 oz. package Spaghetti Pasta
  • 4 Eggs
  • 1 C. Grated Parmesan Cheese
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

In a large skillet over medium heat, sauté the bacon, stirring occasionally, until pieces start to crisp and most of the fat is rendered. Transfer bacon to a large bowl and set aside. Pour the broth into the same large skillet over medium-high heat. Bring to a boil. Add the spaghetti and cook for 9 minutes, stirring occasionally, until al dente. When the pasta has about 2 minutes left to cook, add the eggs and parmesan to the bacon, and season with salt and pepper as needed. When the pasta is done, remove from heat. Add the bacon and egg mixture to the skillet, and quickly stir until the carbonara is thickened and creamy. Season liberally with pepper before serving.
