Onion Beef Rolls

- 1 C low-sodium soy sauce
- 1/2 C packed light brown sugar
- 2 lbs beef tenderloin, trimmed
- 4 green onions
- Salt and Pepper
- 2-4 Tbs olive oil
- Well-moistened bamboo skewers
Whisk together soy sauce and brown sugar in a small bowl until dissolved, then set aside.
Slice tenderloin into 1/4-inch thick slices, at least 4 inches long, trimming fat away.
Place each slice in a large plastic freezer bag and evenly pound them with the flat end of a meat pounder until they become 1/8-inch thick.
Cut the tops of the green onions into 3-inch lengths, and the white portions into thin rings.
Dip each slice of beef into the soy mixture, place on a clean surface, and sprinkle with salt and pepper. Place 2 pieces of green onion across the middle of each slice, roll up into a tight packet and secure with a skewer.
Cook beef rolls in skillet with olive oil on high. Brown the beef, turning the rolls toto cook all sides, until medium rare or for 2 to 4 minutes.
