Open Face Fresh Peach Pie

The best fresh peach pie you'll ever taste. You'll never make another peach pie except this one.

Ingredients

  • 1 rich pastry pie crust, store bought or homemade
  • 1 C. granulated sugar
  • 3 Tbs. corn starch
  • Peeled fresh peach halves
  • 1/2 pint heavy cream

Directions

Line a pie pan with rich pastry. Mix 1 C. granulated sugar with 3 Tbs. corn starch. Cover inside of pastry shell with 3/4 of this mixture, pressing it out to the sides. Arrange peeled halves of peaches close together around the outside edge, with insides of peaches up. Then fill in with other peaches until pan is full. Sprinkle remainder of mixture over the peaches and then carefully pour 1/2 pint of cream around the peaches, putting a little cream into each peach center. Place in 350 degree oven until pastry is set, then reduce heat and bake slowly until peaches are tender and custard is clear and firm. Depending on your oven, it can take from 45-55 minutes. Chill and serve.
