Open Face Veggie Sandwiches

This sandwich is so hearty you'll want to eat it for dinner every night.

Ingredients

  • 2 jars roasted red peppers
  • 1 red onion, sliced
  • 1 large beefsteak tomato, sliced
  • 1/2 lb. thinly sliced Swiss cheese
  • 1 C. mayonnaise
  • 2 Tbs. pesto sauce
  • 4 large sub rolls

Directions

Drain jars of peppers and blot dry. Slice Rolls on one side to make an open-faced sandwich form. Mix mayonnaise and pesto sauce together. Spread mixture liberally inside rolls. Place a layer of red peppers on top, then layer with red tomato, another layer of red onion, and top with thin slices of cheese. Place sandwiches, open faced, on a cookie sheet. Place under broiler until cheese is golden and bubbly.

Makes 4 sandwiches.
