Open-Faced Carrot Salad Sandwich

This crunchy salad-sandwich makes a great, healthy snack.

  • 1/2 small banana, peeled
  • 1 C. shredded carrots
  • 2 tsp. lemon juice
  • 1/4 tsp. grated lemon zest
  • 2 Bibb or butter lettuce leaves
  • 1 slice whole-grain pumpernickel bread
  • 2 thin unpeeled apple slices

Mash the banana in a small bowl. Add the carrots, lemon juice and lemon zest, and stir to combine. Place the lettuce on the bread, top with the carrot salad and apple slices.

  • I have come to the conclusion that people in different parts of the country enjoy different things. Like ham spread with kraut. No way! Or cottage cheese in a lasagna. To each his own!!!!

  • Have to agree, these sandwiches may be good for home lunches or snacks but not for brown bag lunches! Not even with tupperware containers. refrigeration, need to heat, etc.

  • Who is in charge of this site? Cause if you think this is a good brown bag lunch....... you are mistaken. Do you even know what brown bagging it is? This was in the newsletter for brown bagging and it is not that at all, neither are the others I have read so far!

    Good sandwich, but not for brown bag. How do you get this job?
