Open Faced Reuben Sandwich
Ingredients
- 1 lb. bag fresh sauerkraut
- 1/2 C. thinly sliced red onion
- 1 lb. sliced corned beef brisket
- 1/2 lb. sliced Swiss cheese
- mustard
- rye bread
Directions
Pre-heat oven to 400 degrees. Drain sauerkraut, very, very well. Mix with onion. Place this mixture into the bottom of a casserole dish. Then place corned beef slices on top of the sauerkraut and cheese on top of corned beef. Cover and cook for about an hour. Toast bread and spread mustard. Spoon mixture onto bread, trying to keep in the layers.
