Orange Baked Alaska

Ingredients
- 3 lg. oranges
- 1 pt. vanilla ice cream or 1 pt. orange, lemon or lime sherbet
- 3 eggs whites
- dash cream of tartar
- 1/4 tsp. vanilla extract
- 6 Tbs. sugar
Directions
Halve oranges. Use a sharp paring knife to scallop top edges. Use a grapefruit knife and/or spoon to remove pulp. Reserve pulp for another use. Scoop ice cream or sherbet into empty orange shells. Cover and freeze overnight.
At serving time, preheat broiler unit. In small mixer bowl, beat egg whites, cream of tartar and vanilla over medium speed until soft peaks form. Gradually add sugar, beating on high speed until stiff, glossy peaks form. Do not over-beat. Spread meringue over frozen filling, sealing well so that ice cream will not melt during broiling. Broil 4-5 inches from heat for 2-4 minutes or until meringue is slightly brown. Serve immediately.
