Orange, Celery and Onion Salad
30 min preparation + 10 min cooking
Serving Size / Yield
- 1 1/2 C cooked yellow rice
- 1/2 red onion finely chopped
- 2 stalks celery cut into 1/2-inch pieces
- 1/2 seedless cucumber quartered lengthwise and cut into 1/4-inch slices
- 6 oz chopped oranges
- 1/4 C chopped fresh cilantro
Boil yellow rice in pot with a tablespoon of olive oil for 30 minutes.
Place rice, red onion, celery, cucumber, oranges, and cilantro in a medium bowl and toss well.
