Orange Chiffon Cake

This is a really easy cake to throw together that is always delicious. The sugary glaze really tops it off.

Ingredients

  • 2 C. all purpose flour
  • 1 1/2 C. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 6 eggs, separated
  • 3/4 C. fresh orange juice
  • 1/2 C. vegetable oil
  • 2 Tbs. grated orange peel
  • 1/2 tsp. cream of tartar
  • Orange Glaze:
  • 1/2 C. butter or margarine
  • 2 C. confectioner's sugar
  • 2-4 Tbs. fresh orange juice
  • 1/2 tsp. grated orange peel

Directions

In a large mixing bowl, combine first 4 ingredients. Add egg yolks, orange juice, oil and peel. Beat until smooth, about 5 minutes. In another bowl, beat egg whites and cream of tartar until stiff, but not dry. Fold into orange mixture. Spoon into ungreased tube pan. Bake 350 degrees for 45-50 minutes or until tests done.

To make glaze, melt butter in saucepan, add rest of ingredients. Drizzle over cake.
