Ingredients

  • 6 oz. semi-sweet chocolate pieces
  • 1/4 C. water
  • 3 whole eggs and 2 egg yolks
  • 1/4 C. sugar
  • 1/2 pkg. unflavored gelatin
  • juice and grated rind of one orange
  • 1 C. whipping cream

Dissolve gelatin in orange juice and allow to cool.  Melt chocolate with the water.  Beat together eggs, egg yolks, and sugar until very thick.  Fold in chocolate with a spoon.  Add gelatin and grated orange rind.  Add cream half-whipped.  Allow the mousse to set in individual chocolate shells, small serving dishes, or a glass bowl.  Decorate with rosettes of whipped cream or finely grated chocolate.
