Orange Quinoa Dessert

This dessert is easy, healthy and tastes fabulous! It's a great recipe to use if you have a rice cooker, although it's not necessary.

  • 1 1/2 C. quinoa
  • 2 C. orange juice
  • 1 Tbs. brown sugar
  • 1 Tbs. unsalted butter
  • pinch of salt
  • 3 Tbs. chopped nuts, macadamia, almonds or pecans

Combine all ingredients in rice cooker and push the "cook" button.  After it's finished cooking, let it steam in the cooker for 10 minutes.  Add nuts.

Note: If you don't have a rice cooker, you can make this dessert on the stove, cooking the quinoa in the orange juice, butter, sugar mixture.
