Serving Size / Yield
8 servings
Ingredients
- 1 tsp. baking soda
- 2 C. flour
- 1 C. sugar
- 1/2 C. shortening
- 2 eggs
- 1 C. sour milk
- 1 unpeeled orange, halved
- 1 1/2 C. raisins
- Frosting:
- 2 C. confectioner's sugar
- 1 tsp. butter
- 1/2 juice of above orange
Directions
Squeeze most of juice from orange halves and set aside half of the juice for later use in frosting. Grind remainder of orange in a food processor or blender and set aside. Combine dry ingredients. Add shortening, eggs, and milk. Beat well. Stir in raisins and the half of orange juice allocated for the cake. Mix well. Pour batter into an 8"x8" well-greased cake pan. Bake at 350 degrees until cake springs back from light touch to top, or toothpick inserted comes out clean. Allow to completely cool before frosting.
Frosting: Beat sugar and butter with mixer until well blended, then add orange juice and heat until very smooth. Spread over cooled cake.
