Orange Shrimp Alfredo
Ingredients
- 16 Shrimp, large, peeled and deveined
- 1/2 C. Red onion, diced
- 1/4 C. Olive oil
- 1 lb. Sunkist orange segments
- 3/4 C. Sunkist orange juice, fresh
- 2 C. Alfredo sauce, prepared
- 4 tsp. Fresh dill, chopped
- 1 1/2 lbs. spinach Fettuccini, cooked drained, warm
- 1/4 C. Tomato, diced ¼"
Directions
Slice shrimp in half length-wise. Cover and hold refrigerated. Sauté 8 shrimp halves and 2 Tbs. diced red onions in 1 Tbsp olive oil in medium sauté pan. Cook until shrimp just begins to turn pink. Add 3 oz. Sunkist orange segments and 3 Tbs. orange juice and bring to a simmer. Stir in 1/2 C. Alfredo sauce and 1 tsp chopped dill, blending thoroughly, heating through. Add 6 oz. fettuccini and toss to coat with sauce. Mound fettuccini with sauce on serving plate. Garnish with 1 Tbs. diced tomatoes and 1 oz. Sunkist orange segments. Serve immediately.
