Orange Tomato and Mushroom Breakfast Tacos
- 1 handful orange cherry tomatoes, halved
- 2 handfuls sliced crimini mushrooms
- 3 fresh tortillas
- 2 eggs (whisked with salt and pepper)
- 1-2 handfuls Mexican shredded cheese
- salt and pepper
- pico de gallo
1. Saute mushrooms in butter and set aside.
2. Scramble eggs
3. When eggs are almost finished, add cheese and tomatoes.
4. Add mushrooms.
5. Wrap in a warmed tortilla and serve with guacamole and pico de gallo.
