Oregon Raisin Rum Pound Cake

This cake has really yummy holiday flavor – great for entertaining or just for the family.

Ingredients

  • 2 C. flour
  • 1 1/4 C. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cream of tartar
  • Juice and rind of 1 small orange + water to make 1/2 C.
  • 1/2 C. shortening
  • 2 eggs
  • 3/4 C. raisins
  • Sauce:
  • 1/4 C. sugar
  • 1/4 C. orange juice
  • 2 tsp. rum extract

Directions

Sift together the dry ingredients. Add orange rind, juice and shortening. Add eggs and beat 2 minutes. Fold in raisins. Pour into a greased foil-lined loaf pan. Bake at 350 degrees for 1 hour or until done. Remove cake from pan. Top with sauce ingredients which have been mixed together.

Yield: 1 loaf
