  • 2 oz. digestive biscuits
  • 2 T. butter, melted
  • 8 oz. cream cheese, softened
  • 1/2 C. whipping cream
  • 1/3 C. confectioner’s sugar
  • 8 Oreo cookies, divided
  • 1 tsp. lemon juice
  • 1/2 tsp. pure vanilla extract

Line your cupcake pan with paper liners. Place five Oreo cookies in a ziplock bag and crush with a rolling pin and set aside. Repeat with the digestive biscuits in another ziplock bag. Place digestive biscuit crumbs in a large bowl and combine with melted butter. Evenly distribute mixture into the bottom of each cupcake mold and press firmly to form a crust. Place in freezer for 10 minutes. In a large bowl, beat the whipping cream until soft peaks form. In another bowl, beat together cream cheese, sugar, vanilla, and lemon juice. Add in whipped cream and whisk until well combined. Add in crushed Oreos and slowly stir until well mixed. Fill each cupcake mold with batter and smooth the tops. Refrigerate overnight. Use the remaining Oreos to garnish once chilled and firm.
