Organic Herb and Veggie Baked Chicken

The taste of the chicken is moist and full of flavor. The juice is used as a gravy. It is a wonderful way to bake a chicken. My friend from France introduced this method of baking chicken to me and I have added more herbs.

  • 1 whole chicken
  • organic sm. carrots
  • 1 lg. white or yellow onion
  • 6-8 small red potatoes, halved
  • 1 C. fresh basil, chopped
  • 1/4 C. thyme and rosemary
  • 1/4 C. olive oil
  • kosher salt and pepper to taste

Stuff chicken with organic fresh carrots, onion and potatoes, fresh basil, thyme and rosemary. Surround chicken with extra vegetables in baking dish. Place herb mixture under skin of chicken as well as inside. Sprinkle some olive oil on surrounding potatoes and vegetables. Bake at 350 degrees for 20 minutes per pound (i.e. a 4-lb. chicken will bake for 1 hour and 20 minutes).
