Oriental Cucumber Salad

A delicious, easy-to-make and low-calorie salad.

Ingredients

  • 2 med. size cucumbers, peeled and seeded
  • 2 tsp. salt
  • l/2 C. white vinegar
  • l Tbs. sugar
  • l Tbs. water
  • l l/2 tsp. soy sauce
  • l/2 tsp. ground ginger

Directions

Cut cucumbers into thin slices. Place in bowl and sprinkle with salt. Let stand at room temperature for 1-2 hours. Drain and squeeze out excess liquid. Combine vinegar, sugar, water, soy sauce and ginger in serving bowl. Add cucumbers and mix well. Chill thoroughly before serving.
