Oriental Cucumber Salad
Ingredients
- 2 med. size cucumbers, peeled and seeded
- 2 tsp. salt
- l/2 C. white vinegar
- l Tbs. sugar
- l Tbs. water
- l l/2 tsp. soy sauce
- l/2 tsp. ground ginger
Directions
Cut cucumbers into thin slices. Place in bowl and sprinkle with salt. Let stand at room temperature for 1-2 hours. Drain and squeeze out excess liquid. Combine vinegar, sugar, water, soy sauce and ginger in serving bowl. Add cucumbers and mix well. Chill thoroughly before serving.
