Lemon squares are one of my go-to desserts. Whenever it's on the dessert platter, it's my first pick! Enjoy this easy and delicious dessert recipe.

  • For Lemon Filling:
  • 1 pkg Instant Lemon Pudding
  • 2 cups Milk
  • 4 Egg Yolks
  • 1 tsp Vanilla
  • 2 cups Powdered Sugar
  • 1 cup Flour
  • For The Crust
  • 2 cups Powdered Sugar
  • 1 cup Flour
  • 1 stick Softened Margarine
  • 1 tsp Vanilla

Start with the crust. Combine powdered sugar, flour, margarine and vanilla until it forms a loose dough. You then press it into the bottom of a 9x13” pan, and bake for 15-20 minutes at 375 degrees.
While that bakes, combine milk and instant pudding. Mix for a few minutes and then add the yolks and vanilla until it's all mixed well. Than just slowly add the powdered sugar and flour until it's mixed well.
Once the crust is done and a caramel color, pour the filling on top and back at 325 for another 15-20 minutes. Once it's finished, sprinkle with powdered sugar and let it cool to room temp. Then you can either chill in the fridge for a cold bar, or serve at room temp. Top with lemon rind.
