  • 1 T. sugar
  • 3 T. butter
  • 32 oz. chicken stock
  • 15 ½ oz. can of cannellini beans
  • ½ C. heavy cream
  • 1 lb. sweet onion, sliced
  • ½ C. Parmesan cheese, grated
  • ½ lb. white potato skin, cubed
  • ½ tsp. salt
  • ¼ tsp. pepper

In a large pan melt the butter. Add in the sliced onions and sugar. Let it cook until it is soft. Add in the chicken stock, salt and pepper. Add the soup into a food processor until its blended. Pour it back into the pan. Stir in the heavy cream and Parmesan cheese. Add in the cannellini beans and potatoes until they are softened, for about 45 minutes. When it is ready to serve top it with croutons and Parmesan cheese.
