  • 1 C. all-purpose flour
  • 3 Tbs. unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 C. margarine
  • 1/2 C. packed brown sugar
  • 1/2 C. white sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/4 C. rolled oats
  • 3/4 C. shaved dark chocolate
  • 36 dark chocolate squares
  • 2 bananas, sliced

Preheat oven to 350 degrees. Grease two cookie sheets or line with parchment paper. Whisk flour, cocoa, baking powder, baking soda, salt and cinnamon together in a mixing bowl. Set aside.

In a large mixing bowl, cream margarine, brown sugar and white sugar. Beat in egg and vanilla. Stir in dry ingredients using a wooden spoon or a spatula. Mix in oats and shaved dark chocolate.

Spoon golf ball sized cookies onto baking sheet and flatten slightly. Bake for 10-12 minutes. Halfway through, place a square of dark chocolate and banana slice on top; continue baking. Remove from oven and allow to cool on baking sheets for 5 minutes and then transfer to wire rack.
