Outback Steakhouse-Inspired Sweet Potato Wedge Fries

- 1/2 C, 2 Tbs olive oil
- 1 1/2 tsp minced garlic
- 1 tsp paprika
- 4 scrubbed sweet potatoes
- 2 tsp salt
- 2 tsp pepper
Preheat the oven to 400º. Chop sweet potatoes into narrow wedges.
Heat oil in saucepan over medium-high. Remove pot from heat and stir in paprika and garlic. Add sweet potatoes and toss to combine, seasoning with salt and pepper.
Spread potatoes on a baking sheet and roast in oven for 20 to 25 minutes. Remove, let cool, and serve.
