Outrageously Rich Mashed Potatoes
Serving Size / Yield
- 2 pounds scrubbed potatoes
- 3/4 cup double cream
- 2 sticks butter (chilled and cubed)
- salt and pepper to taste
Place potatoes in large pot with cold water and one teaspoon salt.
Boil potatoes uncovered on high heat, then lower to a brisk simmer for 45 minutes.
Drain potatoes and keep 1/2 cup of water for later.
Carefully peel and quarter each potato.
Pass potatoes through a meat grinder or use a ricer to mash.
Heat cream in small pan over medium heat. Set aside.
Return potatoes back to pot over medium heat.
Fold in cream and reserved water.
Add butter and fully incorporate.
Season to taste.
Serve while warm.
