  • 1 package of blackberry fusion jello
  • 1 C. blackberries
  • 2 eggs
  • 60 g. cake flour
  • ½ tsp. baking powder
  • 1 T. rum
  • 2 T. oil
  • 3 T. milk
  • 5 T. sugar

Preheat the oven to 375 degrees. In a large bowl, mix the cake flour, baking powder and sugar. In a separate bowl, beat the eggs. Mix in the rum, oil and milk. Combine both mixture, mixing while combining. Transfer, mixture into a greased cake pan. Bake for 20 minutes. Meanwhile, start on your topping by following the blackberry fusion jello instructions. Pour half of the mixture into a cake pan, the same size as the other cake pan with the cake in it. Place the mixture into the fridge until it is firm. Pour the blackberries over the firm jello. Pour the remaining jello mixture over the blackberries. Place in fridge, but remove it from the fridge when it’s not completely firm. Remove the cake from the oven. Invert the cake into the cake pan with the jello. Let it sit so the jello sticks to the cake. Invert the whole cake onto a cake plate. Serve and enjoy.
