As far as eggs go, an omelet is one of the hardest dishes to make. However, with the help of this easy recipe, you can make your own omelets in the oven – no flipping required.

  • 1 bag frozen broccoli (the kind that can be steamed in the bag)
  • 1 C chopped onions
  • 6 eggs
  • ¼ c milk
  • ¼ c Parmesan cheese
  • 1 T olive oil
  • ¼ c chopped parsley
  • Salt and pepper to taste

First, preheat broiler. Steam the broccoli in the bag in the microwave according to the directions on the package. Set aside. Next, whisk together eggs, milk, parsley, salt, and pepper. Add in broccoli, cheese, and onions. In a medium cast iron skillet (or a pan that’s oven proof) pour in the egg mixture over olive oil. Cook the eggs for five minutes until they begin to set.

Place the skillet in the oven and bake the eggs for about three minutes, or until the eggs have solidified. Garnish the omelet with parsley and cheese before slicing and serving.
