This recipe for oven-baked chicken schnitzel is a nice dish to serve this holiday season. It goes great with just about any side and it will go great with your leftover cranberry sauce from Thanksgiving dinner.

  • 1 chicken breast
  • 1 T. flour
  • 1 egg, beaten
  • ½ C. breadcrumbs
  • Lemon zest
  • 1 tsp. dried oregano

Preheat the oven to 400 degrees. In three separate bowls place the flour in one, the beaten egg in one, and the breadcrumbs with the dried oregano in one. Wash the chicken and pat it dry. Add the chicken into the egg, flour and the breadcrumbs, in that order. Make sure it is fully coated. Place the chicken breast on a lightly greased baking sheet. Let it bake for 20 minutes. When ready to serve sprinkle the lemon zest on top. Serve it with a side of pickles and mashed potatoes.
