Oven-Baked Garlic Chicken And Potatoes

- 2 lbs. red potatoes, quartered
- 3 Tbs. olive oil
- 4 cloves garlic, finely chopped
- 1 lemon (1/2 juiced, 1/2 cut into wedges)
- 4 skinless, boneless chicken breasts
- 2 oranges, peeled, chopped
- 1 carrot, chopped
- 1 red pepper, chopped
- 1 C spinach
Preheat oven to 425 degrees.
Combine potatoes with 1 tablespoon olive oil, 3/4 teaspoon salt and pepper to taste.
Bake until the potatoes begin to brown, 25 to 30 minutes.
Heat the remaining olive oil in a skillet. Add garlic and cook for 2 minutes. Remove from the heat and stir in lemon juice.
Season chicken with salt and pepper to taste.
Remove the baking dish from the oven. Add chicken, oranges, carrots, peppers and spinach to the potatoes. Pour garlic and lemon juice over.
Bake until the chicken is cooked through and the potatoes are tender, about 20 minutes.
