  • 4 sweet potatoes
  • ¼ C. olive oil
  • ¼ tsp. sea salt
  • ¼ tsp. garlic powder
  • ¼ tsp. paprika
  • 2 T. parsley, chopped
  • ¼ C. Parmesan cheese
  • ¼ tsp. pepper

Preheat the oven at 450 degrees. Wash the sweet potatoes and dry them. Cut the sweet potatoes into wedges. Place the wedges into a bowl of water with 2 C. of ice. Let them sit like this for 30 minutes and dry them. Put the salt, garlic powder, paprika, and pepper into a Ziplock bag. Add the potatoes into the bag and shake it. After all the potatoes are coated add in ¼ C. of olive oil and toss them around. Line a baking sheet with parchment paper and place the sweet potatoes on the line sheet. Let them bake fro 30-35 minutes or until they are crispy. While the sweet potatoes are baking chop up the parsley and grate the parmesan cheese and place the mixture into a bowl. Toss the sweet potatoes into the mixture and enjoy!
