Oven Fried Crispy Potatoes

- 8 med. potatoes, preferably red
- 5 Tbs. shortening
Preheat oven to 375 degrees. Peel, wash, dry and quarter potatoes. Place shortening in baking pan and melt in oven. Add potatoes, season with salt, and stir to coat. Bake 1 1/2 hours or until golden and crispy. Stir once or twice during first 1/2 hour to ensure even baking.
