Oven-Fried Dill Pickles

Lightly breaded with cornmeal and Parmesan, these baked pickles make a surprisingly good snack.

  • 1/2 C. yellow cornmeal
  • 1/3 C. grated Parmesan cheese
  • 1 tsp. paprika
  • 1/4 tsp. ground red pepper
  • 1 (32-oz.) jar hamburger dill pickle slices, drained
  • Cooking spray

Preheat oven to 450ºF. Combine first 4 ingredients in a shallow dish or pie plate; stir well. Press pickle slices between paper towels until barely moist; dredge in cornmeal mixture. Place pickles on a large baking sheet coated with cooking spray. Lightly coat pickles with cooking spray. Bake at 450ºF for 12 minutes or until golden. Let stand 5 minutes before serving.

  • I have been looking for an oven fried pickle recipe everywhere! Fried pickles are one of my favorite foods. I can't wait to try this. I'll post how it went!
