Oven Potatoes with Tomatoes

I love when my mom makes these Greek-style potatoes. Baking them in the oven is so delicious, and tomatoes give this dish an extra kick.

Ingredients

  • 4-5 potatoes
  • 2 garlic cloves
  • 1 Tbs. oregano
  • 1 bay leaf
  • salt, to taste
  • pepper, to taste
  • 1.2 can stewed tomatoes, finely chopped
  • 1/2 C. or more olive oil

Directions

Peel and cut tomatoes, each in 4 pieces lengthwise. Chop 1/2 can stweed tomatoes or substitute 1/2 can tomato paste. Sprinkle potatoes and tomatoes with salt, pepper and oregano. Put bay leaf in oven pan. Pour olive oil over all and place in baking dish, cover with aluminum foil, the first 30 minutes. Uncover and turn potatoes. Cover again to cook another 30 minutes or until done. Uncover the last five minutes.

Serve with: Beef Kabobs
