Oven Roasted Carrots

- Extra Virgin Olive Oil
- Fresh Black Pepper
- Sea Salt
- Balsamic Vinegar
- 2 Lbs of Carrots (Trimmed and Pealed)
- 1/2 Tsp of Ground Nutmeg
- Chopped Parsley (Optional for Garnish)
- Crumbled Feta Cheese
Start by preheating the oven to 425 degrees.
Chop the carrots up into pieces about a half and inch wide or whatever size you desire.
Take a rimmed baking pan and place the carrots inside. Add in nutmeg, balsamic vinegar, sea salt, black pepper, and olive oil. Just enough so that the carrots are coated.
Take a spoon or your hands and mix the carrots with the seasonings. Then lay the carrots in a single layer on a baking sheet. Sprinkle the crumpled feta cheese over top.
Place pan in the oven for 20 minutes. Carrots should be crispy around the edges and cooked all the way to the inside.
Serve by itself or with parsley flakes.
